Let me just say this: make the cookie dough, buy the Oreos, mix up the brownie batter, whip the buttercream and sprinkle the sprinkles because you can, and it is delicious, and there really is nothing more to say on the matter...
I have never been a fan of anything with a store bought cookie in the middle of it...but I kept seeing different versions of these brownies pop up until one day I just decided to try them! I wasn't disappointed. I wouldn't make them to just keep around the house because frankly, they wouldn't stay around the house. I would eat them all. So if you have a picnic, or a potluck, or a school meeting, these are the brownies to bring!
What you will need:
One package of Oreos
9x13 square pan
For the Chocolate Chip Cookie Base:
1 cup sugar
1 cup packed brown sugar
1 cup (two sticks) butter, softened
1 1/2 teaspoons vanilla
1 teaspoon baking soda
1 teaspoon salt
3 cups flour
1 bag (12 oz) chocolate chips
For the Brownie Top:
1 1/2 cups flour
2 cups sugar
2/3 cup cocoa powder
1 teaspoon salt
1 cup butter, (2 sticks), room temp
2 teaspoons vanilla
3 1/2 tablespoons cold coffee
For the Buttercream:
1/2 cup butter, softened
2 cups powdered sugar, sifted (you don't want lumpy buttercream!)
2-3 tablespoons milk
1 teaspoon vanilla
Begin by preparing your 9x13 pan by greasing it with cooking spray, or butter. Cut parchment paper so that you have extra laying over the edge of the length of the pan, you're going to need something to grab a hold of to remove your brownies from the pan after baking. Set pan aside.
Assemble the cookie dough:
In the bowl of a stand mixer, beat together sugar, brown sugar, butter, eggs and vanilla for 2 minutes. Scrape bowl as needed.
Next add dry ingredients, slowly. Flour, soda, salt. Mix for 2 minutes on low. Add chocolate chips and mix for 20 more seconds. Remove (most of the) dough from mixing bowl and place into your greased pan. Use your hands to create an even layer of cookie dough. You will have just enough cookie dough left over for one batch (12) of cookies. I usually freeze this cookie dough until I need a snack later on in the week...
Preheat oven 375.
Set pan aside and mix up the brownies:
In a large mixing bowl add all dry ingredients: flour, sugar, cocoa, salt. Stir to combine. Next, add eggs, vanilla, butter. Mix by hand for about 1 minute, add in the cold coffee and mix for another minute. Batter will be pretty thick.
Now the fun part!
Layer your Oreos on top of the cookie dough. Next, plop your brownie batter on top of the Oreo's and smooth the top with a spatula. Place on middle rack of oven and bake for 40 minutes, or until toothpick comes out clean.
-Allow brownies to cool in pan for at least one hour.
Mix up the buttercream:
In a stand mixer, with the whisk attachment, gently stir together room temperature butter and powdered sugar. Once incorporated carefully add the vanilla and milk and continue to mix for 3-4 minutes, until the buttercream is nice and fluffy and smooth!
When your brownies are cool, carefully remove them from pan. They should come right out if you have greased your pan and with the help of the parchment paper. Set on extra large cookie sheet, or cutting board and frost brownies. Sprinkle with bright and fun sprinkles and then cut brownies with sharp knife. This may take some elbow grease, as there are a lot of delicious layers to cut through.
Send all but the corners, ends and ugly pieces to your husbands work, or son's school.
