I love this dish. It is easy, and goes with everything, or alone. I like to make it for myself during the week for lunch. I'll eat it running around the house, or sitting down with some left over roasted chicken thrown on top. And if it's the end of summer, or beginning of fall, and you find yourself with a lot of zucchini and cherry tomatoes, well...here ya go!
What you will need: *yields 3 as side dish, or 2 as main dish
3-4 medium sized zucchini
1 1/2 cup cherry tomatoes
1 green onion
2 tablespoons fresh herb
(I use dill, cilantro and basil.
Yes, all together! but if you
only have 1, that works!)
olive oil spray
What you will do:
Wash zucchini, cherry tomatoes, green onion and herbs and allow to air dry.
Slice each zucchini down the middle and place tender side up. Sprinkle salt onto flesh of zucchini and then flip over and lay onto a baking sheet. Allow zucchini to sit for 15-20 minutes. This allows some of the water to be drawn out of the zucchini.
While you wait for the zucchini to dry out, slice the cherry tomatoes in half and set aside. Next place grill pan on stove and turn to medium high heat. Spray grill pan with olive oil spray and wait for oil to heat. Once grill pan is hot gently place zucchini halves onto the pan, flesh side down. Cook until tender, flipping once. (I like my zucchini a bit firm, so I remove them after 8-10 minutes)
Once zucchini is tender, and has those delicious grill marks we all love, remove from heat.
Divide grilled zucchini between plates and then gently toss halved cherry tomatoes onto the plates, top with fresh herbs, salt and pepper, and squeeze lemon over all of it.
Enjoy immediately! Or whenever your kids give you two minutes to stuff what you can into your mouth!
