I think my twins favorite season is peach season. They love sneaking peaches off the counter, and love acting like I left them there just for them! And to be honest, now I look for it to happen. Two little 2 year olds thinking they're being sneaky, grabbing peaches and running like little villains from the kitchen.
I haven't found anywhere to go and pick peaches, the way we did growing up, but I have found a great little orchard about 20 minutes away, that has the best peach soft serve, and jalapeño pimento cheese for sale. I mostly buy the cheese as a reward (for myself) for surviving an orchard trip with 3 children.
Anyway, I've been peeling and slicing and freezing most of my first box of peaches, for autumn and dead of winter cobblers and pies, but decided to portion out a few in smaller batches to freeze (not canning any this year...sad.) for "fresh" peaches and cream oatmeal. I'll be honest. I loved those sugary packets of instant oatmeal growing up. Strawberry and Peach were my favorite flavors, and homemade isn't that much work (thank you microwave) and ten times tastier.
Only one of the twins likes oatmeal. The other one gives me the look of death when I give her a bite.
1 outta 2, can't beat that.
Yields 2 large portions, or 4 smaller, side portions
What you will need:
1 cup quick oats
1 cup water
1 cup milk
3 tablespoons brown sugar
sprinkle of salt
1 cup fresh peaches, sliced (i usually peel all but a few for the top)
1 teaspoon vanilla
a bit (4-5 tablespoons) of Half n Half, or Heavy Whipping Cream
raw sugar, to sprinkle on top
What you will do:
In a medium sized, microwave safe bowl, mix the oatmeal, water, milk, brown sugar, salt and peaches (reserving a few slices for when it comes out) on high for 3-4 minutes. Keep an eye on it just in case it decides to bubble over.
Carefully remove from microwave and mix in vanilla. Portion into bowls, top with peach slices, raw sugar and cream.
