We love 4th of July! We love fresh fruit! We love fresh whip cream! And heaven knows WE LOVE CAKE.
So here is an EASY (seriously) recipe for a gorgeous cake that you can whip up in no time.
You will need:
one yellow cake mix (Duncan Hines if you can find it.)
For the topping:
2 cups fresh blueberries, strawberries and raspberries
One pint whipping cream
1 cup powdered sugar
1 teaspoon vanila
Bake cake according to box. using two 8" or 9" rounds.
Grease those suckers well. Or use parchment. Whatever you do, don't let them stick to the pan!
After baking, let them cool completely.
Meanwhile whip your cream.
In a stand or handheld mixer, combine cold whip cream, powdered sugar and vanilla. Mix until it starts to thicken. This only takes a minute! Keep an eye on it, you don't want to end up with butter. haha! (Yes, I've done it.)
Assemble the cake. Spread a generous amount of whip cream on the top of one cake and add a few of the berries. Next, carefully place the other cake on top of this. Spread more whip cream onto the top layer and carefully add berries to the center. As many or as few as you like!
This cake should be eaten soon after assembling. If not, make sure it is refrigerated.
