This is a perfect summer salad. It's so simple to put together and makes a beautiful side dish to most any meal. Honestly, I could eat it AS a meal. When I make it, I ususally eat half of the ingredients before they ever make it into the bowl. It's a winner!
The list of ingredients may seem odd at first but trust me, once you start eating it you won't be able to stop.
Will serve 6 as a side dish
You will need:
1 large cooked sweet potato (skins removed and cubed)
1 can black beans, rinsed and drained
1 cup cooked quinoa
2 mangoes, peeled, seeded and cubed
1 red bell pepper, chopped
1 avocado, chopped
1 bunch cilantro, stems removed
1/4 cup red onion, chopped (*optional)
Juice of 1 large lime
Good quality Balsamic vinegar, about 3 Tablespoons (or to taste)
Salt, to taste
Preheat oven 375F, poke sweet potato with a fork and cook for 45 mintes
While that is baking, cook 1 cup of quinoa according to package.
In the meantime prep the remainder of ingredients: black beans, red pepper, avocado, cilantro, and onion if using.
Let the potato and quinoa cool before placing them in a big salad bowl with the rest of the ingredients. Drizzle the lime juice, balsamic vinegar and salt, toss gently. Taste and adjust accordingly.
