Frozen Lime Cheesecake Pie

This is a great recipe. With the weather warming up (for me anyway!) I am starting to think about lighter, more refreshing desserts. Don't get me wrong, I love all desserts! But this is a nice change and so easy to make! The hardest part is waiting the 6 hours for it to freeze before you can eat it!
This recipe calls for a prepared graham cracker crust. They are simple enough to make but if you use a store bought one, great! It makes this recipe EVEN EASIER! That's what is so great about this dessert. It takes only a few minutes to whip up. Who doesn't love an easy recipe?

You will need:

1 prepared 9-inch graham cracker crust

⅓ Cup Karo light corn syrup
½ Cup milk
½ Cup sugar
2 teaspoons lime zest
¼ Cup fresh squeezed lime juice
1 package cream cheese (8OZ), cubed


Instructions:

In a blender combine, syrup, milk, sugar, zest and juice. Blend until smooth.
Next, gradually add the cream cheese cubes. Blend until smooth.
Pour into prepared crust. Freeze for a 6-8 hours. 
*Optional: top with whipped cream and more lime zest. 

SO EASY! and so delicious!
