This recipe is very simple. I use a box cake mix to make life easier but if you have a favorite white or yellow cake mix recipe from scratch, use it!
You can really dress the cake up by baking it in any 10 or 12 cup bundt pan. My favorite is the square bundt made by nordic ware. The top is flat making it easy to pile the cranberries on. Most bundt pans have a rounded top and in that case just put the cranberries in the center and around the sides. It will be beautiful no matter shape you use!
You will need:
1 white or yellow cake mix (I love Duncan Hines)
For the glaze:
1 cup powdered sugar
Juice of one orange
1 cup sugared cranberries

Following the cake mix instructions, bake cake in bundt pan. Let cool in pan for 10 minutes before removing to cake plate. While the cake is baking follow our recipe for preparing cranberries.
Allow to cool for an hour or so. In the meantime mix together your glaze.
Start with one cup of powdered sugar and adding 1 tablespoon of juice at a time, stir until you have a drizzling consistency. If I have a lemon on hand I like to add a squeeze of that to the glaze as well.
Allow the glaze to set for 10-15 minutes before topping with cranberries.
