Crispy Green Bean Fries

These baked green bean fries are so good and an easy addition to most any summer meal. They take about 30 minutes from start to finish.

Serves 4

You will need:

1 pound fresh green beans, ends trimmed
1 ½ cups panko
¼ cup grated parmesan cheese
Salt, pepper, garlic powder to taste (or any others that sound good)
2 eggs
Olive oil

Heat oven 425F. Line cooking sheet with parchment paper or use a cooking spray.
Rinse and trim the ends of green beans.
In a shallow baking dish combine panko, parmesan, and seasonings.
In another small bowl, add eggs and 2 tablespoons water.
Taking 2 or 3 beans at a time, dip them into the egg mixture then roll in the panko mixture until well coated. 
Lay the beans in a single layer on the cooking sheet.
Once you've coated each bean and arranged them in a single layer, drizzle them with a tablespoon or two of olive oil.
Bake for 15-20 minutes until golden brown.
I usually find that mine need additional salt after they come out of the oven.
For a bit more flavor squeeze a lemon over the beans and add a sprinkle of salt.
Serve while hot!
