Curried Chick Peas & Tomatoes

This dish takes about 15 minutes to make. I love it because it's so flavorful, easy to make and looks beautiful too! 

You will need: 
1 pint cherry tomatoes
1 15oz can chickpeas, drained and rinsed
4 scallions, chopped (we will sauté the white end and garnish with the green end)
1 teaspoon curry powder
1 Tablespoon lime juice
1 Tablespoon fresh ginger, grated
Salt & Pepper to taste

In a medium size pan add a bit of olive oil and and sauté the onions, curry powder and ginger over medium-high heat for 2 minutes.
Next add the tomatoes. Cook for 3-4 minutes until they begin to burst. Add the chickpeas and lime juice. Cook another 2-3 minutes.
Season with salt and pepper and green scallions.
