Soft Sugar Cookies

We make these cookies ALL the time. Birthdays, holidays, any day! They are so good and so easy to "dress up" for special occassions.  They are buttery and delicious and melt in your mouth.  YUM.

You will need:

The cookies:
4 1/2 cups flour
3/4 teaspoon salt
4 1/2 teaspoons baking powder
3 sticks of butter (1 1/2 cups), softened
1 1/2 cups sugar
3 eggs
5 teaspoons vanilla

The frosting:
4-5 cups powdered sugar
1 Tablespoon vanilla
4 Tablespoons melted butter
6-7 Tablespoons milk

Note: The cookie dough needs to chill in the refrigerator for at least an hour. So no need to preheat your oven until you are ready to bake.

Combine flour, salt, and baking powder in a bowl and set aside.
In the bowl of a stand mixer cream together butter and sugar until fluffy,  about 2 minutes. Add vanilla and eggs, one at a time. Mix another 2-3 minutes.
Next, slowly add dry ingredients. Once it's all blended together cover the bowl and place in fridge to chill for an hour. (Do not skip this step!)

When you are ready to bake preheat your oven 350F.
Roll the dough into 2 inch balls. Flatten each cookie ball a bit and place on the cookie sheet.
Bake 10-12 minutes. Be careful to not over bake these. You will know they are done when they are slightly golden around the bottom.

While they are baking combine the ingredients for your frosting.  Add the milk slowly one table spoon at a time until you reach the desired consistency. If you feel it's too thin, add a little more powdered sugar until it thickens up.
If you're looking for more flare, add food coloring or sprinkles or candy or whatever you feel like! Either way, these cookies are always a hit!
