I really love beets. And I really love this recipe. Adapted from Food52 cookbook.
What you will need:
1/4 cup pine nuts
2-3 medium beets, with greens attached
2 tablespoons olive oil
1/2 medium red onion, thinly sliced
2 garlic cloves, minced
8 oz orzo
3 oz of crumbled feta cheese
salt and pepper to taste
Toast pine nuts in a dry skillet and set in bowl to cool. Cut greens off of the beets and slice into strips. Set aside. Bring 3 quarts salted water to boil and add whole beets. While beets are boiling, add oil to large skillet and cook red onion and garlic on medium heat until tender, about ten minutes. Reduce heat to low and add beet greens. Cover and cook until tender. Once beets are cooked through drain and remove skin. Set aside to cool for a few minutes. Bring another 3 quarts of salted water to boil and add the orzo. Cook for about 9 minutes, or until al dente. Now peel the beets, the skin should peel right off. Cut up cooked beets into bite size pieces and add to cooked onion and garlic. Once the orzo is finished cooking, drain and add to the pot of beets and onions. Add pine nuts and feta cheese, salt and pepper to taste, enjoy!
*If you don't have any fresh beets handy, or you just feel like something different, you could add a few pickled beets instead of messing with boiling the raw beets.
