Date Bars


These are so delicious. Really. Buttery and rich and I can't stop eating them. I just decided to leave my fork in the pan instead of dirtying a new one every time I pass by them. I can't help myself!

You will need:

1 1/4 cups flour
1 1/2 cups rolled oats
1 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter (2 sticks)
1 1/2 cups chopped dates
1/2 cup sugar
2/3 cup water

Preheat oven 350F. Grease 9" square pan.
Measure out flour, oats, brown sugar, baking soda, and salt into a large bowl. Next, cut in butter with a pastry blender or butter knives. Keep going until the mixture is crumbly.
Press half of your mixture into the greased 9" square pan. Leave the other half in the bowl.
Next add the water, sugar and chopped dates to a small sauce pan. Bring to a boil and allow to simmer until mushy, stirring occasionally. About 5-10 minutes.  
Spread over the crumb crust in the pan. Next add the remaining crumbs to the top and press down lightly with your hand.
Bake for 30 minutes until golden brown.
