So here I am, posting a quick, cake mix, cookie recipe. Let's face it, I have 3 small children. And sometimes you (or me) is out of sugar, and sometimes you (or me) only has enough butter for a smidgen of frosting, with just enough set aside for some popcorn tonight when the kids finally pass out tucked into their warm, little beds. Okay, so that's all me. And we needed some uplifting. It's February! Yay! ...but stlil, it's Monday...and we could all use a cookie.
I used Duncan Hines cake mix. This is the recipe for Snickerdoodles on the side of the box. Easy Peasy.
What you will need:
1 yellow cake mix
3 tablespoons sugar
1 teaspoon ground cinnamon
1/4 cup vegetable oil
Preheat oven to 375.
Combine sugar and cinnamon in a small bowl and set aside. Combine cake mix, eggs and oil in mixing bowl. Stir until well blended. Shape dough into 1 inch balls. Roll each ball in the cinnamon-sugar mixture. Place balls on greased cookie sheet. Flatten balls with the bottom of a glass.
Bake at 375 for 9-10 minutes or until edges are lightly golden. Cool on cookie sheet for a minute or so then move to cooling rack. Frost with a SMIDGEN of cream cheese frosting, pour yourself a cup of coffee, put your feet up, and enjoy!
