Slow Cooker Farmer's Market Soup

This soup is so good! So fall-ish. Smells amazing while it's cooking and is super easy to make. Every vegetable in it can be found at the farmers markets right now. 

You will need:
1 zucchini, sliced
3 stalks celery, chopped
3 large carrots, peeled and chopped
4 large red potatoes, cut into 1 inch cubes
1 small butternut squash, 1 inch cubes
4 cloves garlic
1 medium onion, chopped
¼ cup packed cilantro
¼ cup packed basil leaves
2 cups spinach (loosely packed), trimmed
6 cups chicken broth
Olive oil

Intructions:
Prep your veggies and throw them into the crock pot: zucchini, celery, carrots, potatoes, squash.. Next, put the garlic, onion, basil and cilantro into a food processor with 2 Tablespoons of olive oil. (Consistency will be coarse and chunky.)
Once it's blended add it into the crockpot with the diced veggies. Add the broth as well as salt and pepper to taste. (I confess, I salted this soup about 5 times before I decided it was just right.)
Turn your crockpot on low for 6 hours or high for 3 hours.
Add the spinach to the soup about half an hour before serving.
