This is my favorite salsa. Some call it salsa verde, some green sauce. I just call it green salsa.
It goes well with anything really, but today I made it with my mom's chicken enchiladas. Delicious!
You will need:
1.5 - 2lbs of fresh tomatillos, husks removed
1/4 cup onion, diced
1 fresh jalapeño pepper (sometimes I use serrano, or even a pickled pepper, if I am in a pinch.)
1-2 garlic cloves, rough chopped
1-2 medium limes
1 bunch of fresh cilantro, washed and with hard stems removed
1 medium to large, ripe avocado
Salt and pepper to taste
1/4 teaspoon cumin
Adobo seasoning to taste
Fill a medium size pot with water and bring to boil. When water is at a full boil add the peeled tomatillos to the pot. Allow to cook around 5-7 minutes or until tomatillo's are soft. Drain the water and carefully drop them into a stand mixer. Add to the mixer, the onion, garlic, chopped jalapeno and cilantro. Squeeze in the juice of one lime. Add a couple shakes of salt and pepper and blend until smooth. Next add 1/4 teaspoon of cumin and some adobo. That is totally optional and to taste. Mix again. Now you will add your avocado. Blend or Pulse, but not for very long at all. Just until the avocado is mixed in. Next taste test. Does it need more lime? If so add a bit more. A little more salt? Add some more salt. Once perfected try not to drink it out of the blender. Pour into serving bowl, or a mason jar and set in fridge to cool.
